Ingredients

Scale

2 lbs (900g) flank steak or skirt steak

4 cloves garlic, minced

1/4 cup olive oil

2 tbsp red wine vinegar

1 tbsp lime juice

1 tsp smoked paprika

1/2 tsp ground cumin

1 tsp salt

1/2 tsp black pepper

Optional: fresh parsley for garnish

Optional: chimichurri sauce for serving

Instructions

  1. Prepare the Marinade
In a small bowl, whisk together olive oil, red wine vinegar, lime juice, garlic, smoked paprika, cumin, salt, and pepper.

  2. Marinate the Steak
Place the flank steak in a large ziplock bag or shallow dish. Pour the marinade over the steak, making sure it’s fully coated. Seal and refrigerate for at least 2 hours (preferably overnight).

  3. Preheat the Grill
Heat your charcoal grill to high, creating a two-zone setup if possible. For authentic churrasco a la brasa, use hardwood charcoal for that rich, smoky flavor.

  4. Grill the Steak
Remove the steak from the marinade and let excess drip off. Grill for 6–8 minutes per side, depending on thickness and desired doneness. Internal temp should read 130–135°F (54–57°C) for medium-rare.

  5. Rest and Slice
Let the grilled steak rest for 5 minutes before slicing against the grain into thin strips.

  6. Serve and Enjoy
Serve hot with chimichurri sauce and grilled vegetables. Perfect for lovers of churrasco a la brasa and fans of Latin American BBQ.

Notes

  • For extra tenderness, use skirt steak and marinate overnight.

  • Add a pinch of chili flakes if you like it spicy.

  • Chimichurri is a classic pairing—don’t skip it! It enhances the flavor and gives this grilled steak a herbaceous kick.
